Knead includes a built-in library of reference ingredients based on King Arthur Baking’s ingredient weight chart. These reference values give you accurate volume-to-weight conversions — so when a recipe calls for “1 cup flour,” you know exactly how many grams that is.What Are Reference Ingredients?
Reference ingredients are pre-loaded entries with standardized weight data sourced from King Arthur Baking’s comprehensive ingredient chart. They appear alongside your custom ingredients in The Pantry and are used automatically during recipe creation and ingredient matching. Each reference ingredient includes:- Name — The standard ingredient name (e.g., “All-Purpose Flour”).
- Volume-to-weight conversion — How much one cup of the ingredient weighs in grams.
- Source — King Arthur Baking’s tested measurements.

Using Reference Ingredients in Recipes
When you create a recipe — whether manually, with Snap & Create, or with Paste & Go — Knead automatically matches your recipe ingredients against reference values. This means:- Volume measurements are converted to weight for more accurate cost calculations.
- Ingredient matching during AI recipe capture is more precise.
- Scaling recipes produces consistent results because weight-based measurements do not suffer from the inconsistencies of volume measuring.
Forking a Reference Ingredient
Reference ingredients are read-only by default — you cannot change King Arthur’s data. But if you want to customize a reference ingredient (for example, to add your own cost data or adjust the weight for a different brand of flour), you can fork it. Forking creates an editable local copy of the reference ingredient in your Pantry.- Open the reference ingredient from The Pantry.
- Tap the option to create a local copy.
- The forked ingredient appears in your Pantry as a regular editable ingredient with the reference data pre-filled.
- Edit the cost, unit, supplier, or any other field to match your actual inventory.
Good to know: Forking does not delete the original reference. Your local copy is independent — changes you make do not affect the reference data, and updates to the reference do not overwrite your copy.
